還是由最年輕的壽司職人評價很高的「壽司Arai」?
還是預約需要等兩年的超人氣餐廳「三谷」呢?
不管是哪家答案都是NO。
現今築地第一大的鮪魚批發業者「山幸」的世界上最頂級的鮪魚都被「中條」給競標買走,是壽司業界眾人皆知的事實。
店主中條清隆被稱為"壽司業界地下的老大",現今54歲。
由於他每天早上都會到築地市場,因此和同年齡的「山幸」社長山口幸隆的往來交流越來越頻繁,很快地迷上食材的魅力。
中條先生說:「在築地最好的魚全部都被我買下來。因為如果被其他職人買走的話我會很不甘心」。
完全不計價格高低,每天到築地購買最高等級的鮪魚、鯨魚、山葵與貝類,不知不覺的在築地市場流傳著中條先為傳說中的職人的說辭。
使用定置網來捕獲的上等黑鮪魚配上風味豐厚的紅醋醋飯。
有著上等油脂的鮪魚與略酸口感的醋飯配合度極高。
從東京都心到店裡需約一小時,論方便性也很難說,但是一間只要是喜愛吃壽司的人務必會造訪一次的名店。

可聽到許多批發業者異口同聲的說「壽司尾花真的購買很多好的魚」。
獲得許多孰悉魚的種類的專業人士高評價,例如「中條」的中條清隆,日本第一魚店的「根津松本」的松本秀樹,所謂備受專業人士喜愛的壽司店。
店主尾花輝邦為名門「久兵衛」出身,現今48歲。
在銀座磨練廚藝之後,必須繼承同為壽司職人父親因此返鄉,於2004年開了「壽司尾花」。
從東京都心搭乘電車加上轉乘時間需花上2小時,雖然交通不便,但聽說很多從東京特別到訪的客人就為想品嚐熟練職人尾花先生所料理的獨創料理「用水烹煮的鮑魚」、「半熟蝦蛄」與「特製醬油醃製超濃厚鮭魚卵」等等。
由築地第一大批發業者「山幸」所批發的鮪魚不用說當然很新鮮美味,品質一等。
可於春天享受貝類,夏天為鮑魚、海膽、鮭魚卵,冬天為黑鮪魚,一年當中皆可品嚐高品質的食材。

從JR山手線「上野」站搭乘東京地下鐵日比谷線,於「北千住站」轉搭東武特急兩毛號、於「館林」站下車。總乘車時間約65分。

3. 壽司榮(千葉)

從東京都心搭乘電車也至少要一小時以上到達最近的車站,再轉搭計程車約10分鐘...
雖然是如此偏遠的地方,但還是有很多從日本國內各地的壽司迷來『壽司榮』。
擔任第二代店主的佐藤賀津廣先生現年37歲。
曾於現已不存在的銀座老字號壽司店經過長年的修行累積經驗後才返鄉。
代替高齡的父親擔起『壽司榮』的擔子。
賀津廣先生不像其他年輕壽司職人會造訪許多有名店家品嚐,完全在自己的店裡埋頭專研於食材的研究。
漸漸地有許多人評價此店使用日本全國漁港捕獲的超一流海鮮來料理成獨創壽司,在這兩三年間一下子人氣火速竄紅。
賀津廣先生精通於日本國內的魚類,配合食材所施予的廚藝實在細膩。
「蔥鮪魚卷」使用口感俐落的嫩蔥所包著的黑鮪魚(下顎部分),切薄片的大鮪魚配上鮮嫩多汁的毛蟹統稱為「壽司千層(Millefeuille)」,已變成『壽司榮』的獨家料理。
『壽司榮』的主廚推薦料理從稀有食材作為小菜開始,不到一會就變成超過3小時的長期戰。
所以到訪時務必先確認好最後一班電車的時間!

高岡千春擔任次世代壽司界的年輕職人,受到廣大的注目,於2012年開的新銳壽司店。
高岡唯一的興趣是造訪各壽司店,從獨立開店到現在已造訪過400間店,就為追求自己理想中的壽司。
他平日在店內小憩,早上到築地採購,和東京一流的壽司職人交手往來,參加一級品壽司食材的爭奪戰,同時他對醋飯也投入很大的心血。
沒想到他在千葉縣內向農家租界一塊專用的田地,就為栽培出他心中理想的稻米。

Between Nakajyo and Obana, which do you rate higher? I can book one more sushi restaurant for November and considering between these two. Thank you!

PS. would you say Kiyota is better than both of these sushi restaurants?

If you have the chance to go there, I think you should choose Kiyota. I have written about this many times, but since Kimura-san from Kiyota will unfortunately be retiring very soon, the opportunity to be able to savor his sushi is precious.
Between Obana and Nakajyo, however, I personally prefer Obana.
Otsumami at Nakajyo are exceptionally delicious, but the sushi itself is not particularly to my liking.

I have the opportunity to visit Kiyota (supposedly famous for the quality of the tuna) in Dec, but am interested in Nakajyo. If I have to choose one place - which one should I choose?

@tanseaway how did you manage to book so early for kiyota? I was told resy starts only one month earlier. I got in earlier only when I do that during my visit. Any tips?

The quality of the ingredients is nearly equal in both restaurants, but I feel that Kiyota's nigiri has better quality, so I believe that it would be better to choose Kiyota.
Kiyota's third shop owner Kimura-san is considering retiring this year, so it's likely that December will be the last valuable chance to taste his nigiri.

To clarify - I was just at the restaurant a couple of weeks ago and I was told that they would accept my reservation - by way of hotel concierge. He didn't mention any kind of time constraint. I guess I will find out shortly if there is one.

Wow that explains quite a bit! A few days ago at Kinokuniya bookstore food section, saw the book about excellent fish by Hayakawa Hikari and the guy from Nezu Matsumoto shop (probably providing fish for photos and information) and I was wondering what the shop was about. It does not seem like a big shop from the outside, and interesting it's not even in Tsukiji, but in a residential area (Nezu). Does the shop sell to the public and is it worth visiting (and anything worth buying if they sell cooked portions of something? I doubt I will buy uncooked fish to prep to eat as a visitor!)

Anyone can buy fish at Nezu Matsumoto, a fish shop targeting general consumers rather than chefs.
Their price tag may scare you, selling a sanma for ¥3,000 where supermarkets' prices are between ¥200 to ¥300.
However, the quality of the fish at Nezu Matsumoto is comparable to what upscale sushi restaurants in Ginza serve.
Last year, I made hand-rolled sushi using tuna supplied to Nezu Matsumoto by ”Yamayuki” along with vinegared rice as well as dried laver ”Kontobi” from Maruyama noriten(丸山海苔店), whose clients include high-end sushi restaurants. The result was the exact taste of upscale sushi restaurants in Ginza. (While my handmade shari was quite horrible lol.)

I made a reservation via a paid concierge service(jpneazy), maybe you can consider that if you are not staying at a hotel.
