以東京人氣第一而聞名的炸豬排店「成藏」在西元 2019 年 3 月 31 日暫時關店後,終於在 7 月 8 日將店址從高田馬場移到南阿佐谷重新開張了。
雖然過去「成藏」以店外大排長龍的客人而聞名,但是新店舖這邊已經有提供一部分座位可在 OMAKASE 網站上預約,所以客人們不需要排隊等候就可以品嘗到絕品美味的日式炸豬排。
(但是新店舖只有 10 席座位,所以恐怕會上演一場座位的爭奪戰……)

Hi Saito san and Everyone, I have made a reservation at Narikura for next month and would just like to ask regarding the menu before I visit the restaurant.

From what I see, there are three different cuts (not including the pork type) to order:

1. Chateaubriand Cutlet (180g or 120g)
2. Rib Loin Cutlet (200g)
3. Loin Cutlet (180g)

Can someone please tell me the differences between each of these three cuts? Which one would you say is the best cut for Narikura (or does it depend on each person preference of fat/lean)? How would you rank these three cuts from most fats to least fats?

Chateaubriand: Even among fillets, it has the softest central meat. It has almost no fat.
Loin (toku roast): This cut is from near the back. The flavor and sweetness from the fat is enjoyable.
Rib loin (rib roast): From one roast, this part only serves 3-4 people. It has more fat than a pork loin.

If you're going there for the first time, I think the best option would be their main brand called Tokyo X which is a set for ¥5,780 that comes with both Chateaubriand and a special roast you can try together.
And although it isn't pork, their chicken cutlet (sasami cutlet)that you can order as a single item is also really delicious, so I recommended that.

I meant that in addition to the a la carte menu, which lists Chateaubriand and loin, they have a combination menu that lists a dish that comes with these two types of cuts. Even if you were to order the Chateaubriand set meal, loin would not come with that meal.

Thank you very much for that Saito San. Can you please suggest someone who doesn’t speak or read Japanese on how to go about ordering this Tokyo X Chateaubriand combination menu? And the price is 5,780 JPY which is exactly same as the regular Tokyo X Chateaubriand set (non combination) menu?

1) Chateaubriand (180g), 2) Chateaubriand (60g), and Special loin Cutlet (120g) are the same set price of 5780 yen.
Concerning the method for ordering, I believe there will not be a problem because there are staff who can speak English.

Menchikatsu

So onto some good news... Omakase has opened up the Narikura Asagaya calendar to everyone now. The restaurant itself kept seats private to only select customers, during their soft opening. Now that both locations are open, I guess they're more at ease with the demand. I already see a few slots for this week. Funny... Now that it's easy to get seats, I don't want it as badly (:D) Think I'll go back to the Takadanobaba one next time, and line up. That was pretty fun.

If you see the calendar, but no seats, it's possible that the seats are available only to guests who have been there before (a hidden feature in Omakase).

The reopening of the original location makes things so much easier. It's far more fun to line up for tonkatsu. And I can't see at all how the chef being there, will make it taste any better (or worse) than it is, from a branch location. Narikura is really a spongy juicy ball of fat with excessive flakes all over it... a glorious ball of fat though! Haha. And he sure does look cool wearing his 'chef's whites'.

I think they ruined themselves when becoming a reservation only restaurant. Omakase didn't force them to join Omakase's booking platform.

They didnt exactly ruined themselves. They had a list of local regulars visiting anyway. Just that tourists wont have a chance to visit.

When I visited them in Takadanobaba, I swear the entire line was basically Chinese tourists. So this Omakase 'front' is not so bad, if the valued regulars really have an immediate direct line of contact, and can go whenever they want to Asagaya. Let the tourists go to the Takadanobaba one, it's fine. If it matters that much to someone, to visit the 'honten' because the chef is there, they'll find a way in. Hard work pays off.

And please confirm for me. yoyaku.at which is the same company as Omakase, they're one of the largest booking platforms in Japan no? Surely they know what they're doing.

Yoyaku.at is just a DNS A record name that points to the same IP addresses as www.omakase-japan.jp, i.e. different web addresses for the same servers.

Which is by the way, also a nightmare to use. I actually prefer Omakase's calendar to the Toreta one. Some of their restaurants are also impossible to get seats, as regulars have already filled most of the slots.

Well i don't think it's bad in a way. Omakase just remove those restaurants which are famous. It will instead drive alot of foreign visitors/foodies to great places which are off the beaten track.
