The chef of everybody's favorite sushi restaurant is quitting!
As you may know, Hiroyuki Sato, head chef at the 2 Michelin starred Sushi Tokami, whose playful character and sushi made with red vinegar score highly among visitors from overseas, will be leaving the restaurant at the end of March (Tokami is not actually Sato's restaurant, it is owned Yamayuki, a famous tuna wholesaler at Tsukiji Market).
Chef Sato will be going on to open his own sushi restaurant. (Second-in-command Chef Ota will take over at Tokami.) It's exciting to think what Chef Sato, who turned Sushi Tokami into an extremely popular restaurant with his unique sushi creations, will achieve as owner of a new sushi restaurant! I'm sure the moment we hear that it is open, the reservations will come flooding in. As soon as we know more about the restaurant, we will let you know about it here!

Leo, is there any update on Sato-san? He was our favorite chef last year, and we are returning in May, hopefully to eat with him again!
