1. 惠比壽遠藤

現今備受注目的年輕職人遠藤先生曾於「壽司齋藤」精進修行過,他於涉谷近郊開了一間壽司店。

2. 熟成鮨萬

20歲後半的年輕店主白山先生,他獨自習得魚的熟成法後開了一間壽司店。
熟成的天數盡不相同,竹筴魚需38日、小鳍需15日、真鯛需18日,在這間「萬」使用的食材,保留魚本身的新鮮美味與彈力來施予絕妙的熟成法。
白川先生與「喜邑」的木村先生、「鮓藤永」的藤永先生都被稱呼為"壽司熟成的魔術師"。他所提供的主廚推薦套餐為23000日幣。
在吃遍正統派的江戶前壽司後,可以來店享用這"與眾不同"的壽司。

3. Mitomi

Mitomi的店主三橋先生曾於現今無名名店「新富壽司」花費22年精進修行過。
本店特色為營業不中斷、以握壽司為主、可依照個人喜好、小菜簡樸...等等。
如同往年的江戶前壽司般,擄獲江戶前壽司迷們的心。
傳承以前於「新富壽司」習得的烏賊印籠詰、鯖魚、小鳍、穴子,是壽司迷們必吃清單。

4. 壽司菅谷彌

經過22年輾轉於「壽司真」、「壽司久遠」、「壽司荒井」等各名店長年累月精進學習的壽司職人菅谷先生,他開了一間名為壽司菅谷彌的壽司店。
擅長於料理的菅谷先生,貫徹店內不提供講究的小菜,而是決定要以美味的握壽司決勝負!的強烈風格。

富所的店主佐藤先生曾於名店「壽司真」花費15年精進修行。

7. 蘭丸

新開的壽司店蘭丸為人氣壽司店「Linda」的分店。被賦予主廚重任的島津先生曾於「壽司荒井」等精進修行過,20幾歲相當年輕又有才。

9. 高柿壽司

高柿先生曾於頂級江戸前壽司店「壽司水谷」「新橋清水」精進修行過。

There seems to be no clear reservation policy, but its popularity has been exploding recently and securing seats is becoming more and more difficult.

Ebisu Endo is still a bit too inexperienced..

Lots of clerical errors, such as having a tag on my coat and subsequently leaving it while I left. There's only 8 seats and at least 2 members that are dedicated waiters, so that was a shock. Mistaking my bill with another patron's was also a blunder.

I really love takagaki. His shari is big and strong flavour but it goes well with neta. Their cost/performance is so good.

I don't know if he serves non-Japanese speakers on their own, but if he doesn't do it, then it probably doesn't matter whether you go lunch or dinner...

@guest I asked Sato-san of Tomidokoro myself. It's not that he doesn't welcome oversea guests.

It's more of the language barrier issue so Tomidokoro regretfully doesn't accept booking from non-Japanese speaker nor via hotel's concierges.

If you speak Japanese fluently, I believe he would welcome your call.

If you couldn't visit Tomidokoro, how about Sushi Shin in Nishiazabu?

That is such a cop-out. First, obviously, the local hotel concierges are 100% fluent. Second, in 20+ visits to Tokyo and more sushi meals than I can count, I've never had a miscommunication issue, and I don't really speak Japanese at all. The chefs who institute these types of policies simply don't want to have to deal with non-speakers, and that's fine, it is their prerogative. Thankfully there are many chefs who are decent enough to make the effort.

Just because you've never had a communication issue doesn't mean there will never be any issues with non-JP speakers at all.
I don't understand what concierges being 100% fluent has to do with anything, because the point is that the restaurant can't handle people who don't speak JP dining there alone. It's not like the concierge dines there with you...

There are MANY things that need communication during a meal, and if a chef feels worried or uncomfortable that he won't be able to make any sort of communication with a guest, I think it's perfectly fine for them to only accept people who can speak JP. It has nothing to do with the "decency" of the chef's character.
As localtaste said, it's usually not the case that restaurants don't want foreigners, they can't handle people who don't speak Japanese.

As the guest above has mentioned, there are so many things which can go wrong. It could be disputes over cost of a meal, food allergy, meal preferences, dining etiquette, etc.

Technically, you might understand to be wary of all these points above based on your 20+trips to Tokyo. But not everyone does, there are so many horror stories of people throwing a big fuss that chefs don't allow them to eat the way they like(seperating the fish from rice in sushi, peeling off the skin of the ebi tempura to eat the prawn before the skin).

If the restaurant is willing to take your reservation, just go ahead and enjoy your time there. If they don't, just move on and pick another restaurant. There are so many other restaurants for one to visit and I am sure one can still be satisfied despite not having the chance to dine at those introduction-only or japanese-speakers only restaurants.

I (mostly) agree with the two of you and fully understand why some restaurants elect to go this route. Trying to get some conversation going on this web site outside of boring recommendation requests. :-P Some will definitely see this as outright xenophobia, and I'm sure that in certain cases, that is part of it. Ultimately, I guess the onus is on us foreigners to get off our asses and learn Japanese.
