2015年,獲得了米其林一星的“蔦”在東京拉麵界引起轟動。在米其林巨大的影響力下,位於東京巢鴨這個非熱鬧場所的小小拉麵店,如今每日都要接待數以百計的食客。

在如此殊榮的光環下,東京拉麵界其實還有一位米其林之星不為人所知。

這位“深藏的米其林之星”名叫齊藤一將(Kazumasa Saito)。早在5年前,也就是2011年“蔦”獲獎的4年前,作為香港的拉麵店“MIST”的主廚獲得了米其林一星。(當時米其林還未成立拉麵部門,其獲得了日料部門大獎)

拉麵界最初的米其林之星,齊藤先生在2012年回日本後創辦了“鳴龍(Nakiryu)”。

雖然位於祥和嫻靜的大塚地區的小巷內,但是每日來此寻求美味的食客络绎不绝。

曾在賓館的高級中餐餐廳擔任大廚的齊藤先生。雖然大家覺得最受歡迎的是使用了豐富的中餐食材製成的擔擔面,但是這裡大膽地推薦同樣美味的“特製醬油拉麵(950日幣)”。

(照片)加入了雞殼,牛骨,牡蠣熬制的鮮美湯頭,和散發著小麥清香的麵條相得益彰。此醬油拉麵被多數拉麵愛好者推舉為東京No.1的拉麵。

“清澈爽口的蔦和鮮美至極的鳴龍”。與相鄰一站之遙的“蔦”的醬油拉麵對比品嚐也是樂事一件。

Wow, thanks for all that knowledge! I was lucky to encounter it then. I was only in Tokyo for a few days for the first time ever. That visit made me move here eventually in 2010.

Wow! The ramen restaurant "Nakiryu" introduced in this site won a single star of the Michelin 2017. Mr. Saito has won the Michelin in two countries following Hong Kong! Absolutely brilliant. Congratulations!

@Kengo Yamada Awesome that you guys already mentioned his Michelin status before he received one here in Tokyo! In 2006 I had ramen at a place called Mist in Omotesando Hills. It was really a great experience. The main thing I remember is that there were drawers under the counter where they stored the chopsticks. Was this Mr. Saito's place as well?

MIST was run by Mr. Saito's master, not Mr. Saito himself (Mr. Saito was MIST Hong-Kong unit's manager), and I think he (Mr. Saito) was not engaged in the administration or operation of Omotesando unit. By the way, Omotesando unit was a quite interesting one, but apparently the administration was not good, so it closed very soon. It's a pity...
