What are the restaurant staff's English comprehension level? I know very basic few words. Do they have a nihonshu menu (kanji is not a problem for me), or do you just ask for "sake, please" and they do pairing/tasting of several varieties?
I have been asking questions regarding reservations; however, their answers are different each time. I'm speculating that they are not planning on taking any new reservations until they can turn around the sales twice a day by taking on an apprentice.
